Here's a delightful menu that will make you feel like you're dining in a cozy Parisian bistro! It's a perfect antidote to the cold wet weather of February. 

MENU

Before-class snack
Gougères - much easier to make than you might think, these addictively crispy, cheese-flavored mouthfuls are the ideal start to a bistro-style dinner. We'll give you all the hints you need to make perfect little puffs the very first time you try them.

Salade a l'Ail
A first-course salad of mixed greens tossed in a garlicky vinaigrette and garnished with bacon and with croutons crisped in bacon fat. Yum! 

Bouillabaisse de Poulet
A superb one-pot dinner combining skinless chicken thighs, fennel bulb, onions, tomatoes, and potatoes, in a rich broth flavored with saffron, fresh thyme, bay leaves, and Pernod (anise liqueur). The ingredients marinate overnight and then simmer together for an hour or so before serving, so it's very easy to make. We'll serve it with grilled country bread so you can soak up every last bit of the delicious broth.

Tarte aux Pommes à la Crème 
Buttery pastry filled with sliced apples and baked with a delicate custard topping made with sweetened crème fraîche.
