Soupe de Poissons
A traditional soup of rockfish flavored with leeks, saffron, shallots, pureed through a food mill and served with rouille.
Frisėe salad with lardons, croutons, poached egg and warm sherry vinaigrette.
One of the best salad ever!
Raw ground beef, seasoned with capers, onion, cornichons, a few “secret” ingredients and egg yolk. A classic!
Steak au Poivre
Hanger Steak coated with crushed black peppercorns
in a sauce of Brandy, reduced veal stock and a touch of crème fraîche…
The traditional gratin of potatoes and Gruyère cheese.
